Tequila Lime Shrimp Pizza

Ingredients
 

Sourdough Pizza Dough

  • 1/2-3/4 cup Water (Adjust depending on the hydration of your sourdough discard)
  • 1 tsp Instant yeast
  • 1 cup Sourdough discard
  • cups Bread flour
  • 1 tsp Sea salt

Shrimp

Pizza Sauce

  • 1 tbsp Butter
  • 2 cloves Garlic, minced
  • 1 tbsp Flour
  • 2 tbsp Lime juice
  • 1/4 cup tequila
  • 1 tbsp Cilantro
  • 1 tsp Sea salt
  • 1 cup Heavy cream

Tequila Cilantro Lime Drizzle

  • 2 tbsp Lime juice
  • 1 tbsp Tequila
  • 1/4 cup Sour cream
  • 3 tbsp Cilantro
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper

Pizza Toppings

  • 8 oz Monterrey jack cheese, freshly shredded
  • 1/2 cup Queso fresco
  • 1/4 cup red onion, diced
  • 1/2 Avocado, diced
  • 1 Jalapeño, sliced
  • 1/2 cup Cilantro, chopped

Instructions
 

  • Combine water, yeast, sourdough discard, bread flour, and salt in the stand mixer.
  • Using the dough hook, knead the dough for 5-8 minutes, or until the dough is smooth and elastic.
  • Cover and allow to rise for 2 hours.
  • In a small bowl, combine shrimp, olive oil, sea salt, black pepper, chili powder, cumin, paprika, garlic powder, and cayenne. Toss to coat the shrimp with the seasonings.
  • Sauté the shrimp in a small skillet for 3-4 minutes or until pink and fully cooked. Remove from the heat.
  • Heat the butter over medium heat in a small saucepan.
  • Add the garlic and stir. Once the garlic is fragrant, add flour and stir continuously for 3-4 minutes.
  • Add the lime juice and tequila to the saucepan, stirring continuously.
  • Stir in the cilantro and salt.
  • Add the heavy cream and simmer until thickened.
  • Remove from the heat and allow to cool slightly.
  • Preheat the oven to 425℉.
  • On a floured work surface, stretch the dough into a 16-18 inch circle.
  • Spread the sauce onto the pizza dough.
  • Spread the prepared shrimp on top of the sauce.
  • Sprinkle half of the Monterrey jack cheese on top.
  • Add the red onion and jalapeño slices and top with the remaining Monterrey jack.
  • Bake for 15-20 minutes or until the crust is browned and the cheese is melted and bubbly.
  • While the pizza is baking, prepare the tequila lime sauce by whisking together 2 tbsp lime juice, 1 tbsp tequila, 1/4 cup sour cream, 3 tbsp cilantro, 1/4 tsp sea salt, and 1/4 tsp black pepper.
  • Once the pizza is finished baking, remove from the oven and allow to cool for 10 minutes before topping with the queso fresco, diced avocado, chopped cilantro, and tequila lime sauce. Slice and serve immediately after additional toppings added.
