White Bean and Ham Soup

Ingredients
 

  • 1 Pound Great northern beans
  • 1 tbsp Butter
  • 1 cup Yellow onion, diced
  • 1 cup Carrot, diced
  • 1 Celery rib, diced
  • 2 cloves Garlic, minced
  • 2 tsp Sea salt
  • 2 tsp Black pepper
  • 2 Bay leaves
  • 4 cups Chicken broth
  • 1 pound Ham, cubed

Instructions
 

  • Rinse the beans. Add the bean and about 4 cups of water to the dutch oven, cover and allow to soak for at least 8 hours.
  • Drain the beans in a colander and set aside.
  • In the empty dutch oven, melt 1 tbsp of butter over medium heat.
  • Add the onion, carrot, celery, and garlic and sauté until tender and translucent.
  • Add the beans back to the dutch oven, along with the chicken broth, sea salt, pepper, and bay leaves.
  • Stir, cover, and simmer for 90 minutes.
  • After the beans have been cooking for 45 minutes, add the chopped ham to the dutch oven, stir, and continue simmering until the beans are tender.
  • Remove the bay leaves and serve.
