  • 1/2-3/4 cup Water (Adjust depending on the hydration of your sourdough discard)
  • 1 tsp Instant yeast
  • 1 cup Sourdough discard
  • cups Bread flour
  • 1 tsp Sea salt

Shrimp

Pizza Sauce

  • 1 tbsp Butter
  • 2 cloves Garlic, minced
  • 1 tbsp Flour
  • 2 tbsp Lime juice
  • 1/4 cup tequila
  • 1 tbsp Cilantro

  • 2 tbsp Lime juice

  • Combine water, yeast, sourdough discard, bread flour, and salt in the stand mixer.
  • Using the dough hook, knead the dough for 5-8 minutes, or until the dough is smooth and elastic.
  • Cover and allow to rise for 2 hours.
  • In a small bowl, combine shrimp, olive oil, sea salt, black pepper, chili powder, cumin, paprika, garlic powder, and cayenne. Toss to coat the shrimp with the seasonings.
  • Sauté the shrimp in a small skillet for 3-4 minutes or until pink and fully cooked. Remove from the heat.
  • Heat the butter over medium heat in a small saucepan.
  • Add the garlic and stir. Once the garlic is fragrant, add flour and stir continuously for 3-4 minutes.
  • Add the lime juice and tequila to the saucepan, stirring continuously.

  • Once the pizza is finished baking, remove from the oven and allow to cool for 10 minutes before topping with the queso fresco, diced avocado, chopped cilantro, and tequila lime sauce. Slice and serve immediately after additional toppings added.
