Strawberry Bread

1/2 cup Coconut oil, melted 3/4 cup Sugar 1 Egg 1/2 cup Sour cream 1 tsp Vanilla extract 2 cups Flour 2 tsp Baking powder 1/2 tsp Sea salt 2 cups Fresh strawberries, chopped Icing 2 cups Powdered sugar 2 tbsp Butter, melted 3 tbsp Heavy cream 1/4 cup Fresh strawberries, chopped
Preheat the oven to 350℉.
In a mixing bowl, stir together the melted coconut oil and sugar.
Add the egg, sour cream and vanilla extract and mix until thoroughly combined.
Add the flour, baking powder and sea salt to the mixing bowl and gently stir until the wet and dry ingredients are just combined.
Gently fold in the chopped strawberries.
Pour the batter into a buttered bread pan.
Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool in the bread pan for 30 minutes before removing to a cooling rack.
In a small bowl, mix the melted butter, powdered sugar and heavy cream until smooth.
Add the strawberries to the icing and stir.
Pour the icing generously over the top of the strawberry bread.
Slice and serve.
