Strawberry Bread

Ingredients
 

  • 1/2 cup Coconut oil, melted
  • 3/4 cup Sugar
  • 1 Egg
  • 1/2 cup Sour cream
  • 1 tsp Vanilla extract
  • 2 cups Flour
  • 2 tsp Baking powder
  • 1/2 tsp Sea salt
  • 2 cups Fresh strawberries, chopped

Icing

  • 2 cups Powdered sugar
  • 2 tbsp Butter, melted
  • 3 tbsp Heavy cream
  • 1/4 cup Fresh strawberries, chopped

Instructions
 

  • Preheat the oven to 350℉.
  • In a mixing bowl, stir together the melted coconut oil and sugar.
  • Add the egg, sour cream and vanilla extract and mix until thoroughly combined.
  • Add the flour, baking powder and sea salt to the mixing bowl and gently stir until the wet and dry ingredients are just combined.
  • Gently fold in the chopped strawberries.
  • Pour the batter into a buttered bread pan.
  • Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool in the bread pan for 30 minutes before removing to a cooling rack.
  • In a small bowl, mix the melted butter, powdered sugar and heavy cream until smooth.
  • Add the strawberries to the icing and stir.
  • Pour the icing generously over the top of the strawberry bread.
  • Slice and serve.
