  • 2 cups Cilantro
  • 1 clove Garlic
  • 1/2 cup Avocado Oil
  • 1/2 Lime, juiced
  • 1 tsp Agave nectar
  • 1/2 tsp Sea salt

Instructions
 

  • In a small mixing bowl, combine the avocado oil, honey, lime juice, chili powder, cumin, garlic, salt, and pepper.
  • Add the shrimp and stir to coat. Allow to marinate in the seasonings for 15 minutes.
  • For the dressing, combine the cilantro, garlic, avocado oil, lime juice, agave nectar, and sea salt in a blender. Blend on high speed until smooth. Refrigerate until ready to serve.
  • Prepare the salads by placing chopped lettuce, tomatoes, jalapeno slices, avocado slices, chopped cilantro, and queso fresco into the bowls. Set aside while preparing the shrimp.
  • Heat 1 tbsp of avocado oil in a skillet on medium high heat.
  • Cook the shrimp for 3-4 minutes on each side or until pink and fully cooked.
  • Allow to cool slightly before placing on the salads.
  • Serve immediately with a drizzle of fresh cilantro lime dressing.
